In answer to a competition mounted by the London store Fortnum & Mason for the best pudding created to mark the Queen’s Platinum Jubilee, I submitted this pudding which I created and involved the pupils of the Cartmel Primary School in its finishing touches. Fingers crossed! The decision will be made and 5 shortlisted entries will be invited to be created live in London week commencing 14 March 2022.
