Autumn baking is such an attractive passtime! The weather starts to be chilly and there is an abundance of fruit perfect for baking! Apples, pears, damsons, plums, all lend themselves to delicious cakes, such as this one here.
Ingredients
- 150g butter, softened
- 200g caster sugar
- 300g plain flour
- 100g sultanas
- 3 large eggs
- 2 tsp baking powder
- 2 tbsp vanilla extract
- 4 apples
- 1 lemon, zest and juice
- 50g fudge, cut in very small dice
- 1 tsp ground cinnamon
- 1 tsp ground ginger
- ½ tsp ground cloves
To serve:
- Icing sugar
Method
Grease and dust with flour a cake tin.
Take 1 tbsp of flour and mix with the sultanas.
Zest and juice the lemon. Put the discarded lemons in a bowl with cold water with a few drops of the lemon juice.
Peel, core and cut the apples in very small dice. Drop into the bowl of the lemony water.
Preheat the oven to 180 C.
In a bowl, use an electric hand whisk to beat the softened butter with the sugar, lemon juice, zest and vanilla until pale and fluffy. Add one egg and 1 tbsp of flour and whisk to incorporate. Repeat with the remaining two eggs.
Add the spices to the flour and stir to mix. Fold the flour into the butter and finish with the sultanas, fudge and the apple pieces, after you drain them. Fold everything with a spatula and transfer to the cake tin.
Place the cake tin in the bottom of the oven and bake for 1 hour. Check that the cake is cooked by inserting a wooden skewer in the middle and that this comes out clean.
Leave to cook in the tin for 10 minutes and turn onto a cake plate. Dust with icing sugar and serve.
