The perfect way to finish a luxurious dinner instead of the usual cheese board.  Or,  as a sharing platter if you like us have a ‘meze’ feel at your Boxing Day table.

Place one for every 4 guests to share and see the eyes light up and hear the voices rise in excitement.  Tunworth is the English version of Camembert so it bakes beautifully giving a gooey, moreish sharing cheese heaven.

I used a Santorini Vin Santo by Tsantali wines because with its deep fruity tones made from sun dried grapes, it has an intensity of sweetness and flavour that goes perfectly with the rich creaminess of Tunworth.

Accompany the cheese with a small glass of chilled Vin Santo on the side.  If you cannot get hold of Vin Santo,  use a sweet sherry instead.

Ingredients (serves 4-6)

  • 1 Tunworth (250g)
  • 30g sultanas
  • 100g Vin Santo
  • 1 tsp chopped rosemary

Method

Put the sultanas in a bowl with the Vin Santo and heat in the microwave for 1 minute.  Leave to steep.

Cut a few slits into the Tunworth, top with the steeped sultanas in their liquid and bake in a preheated oven at 2000C for 15 minutes.  Sprinkle with the chopped rosemary and serve with some fine crispbreads.  Use it as a sharing plate between your diners or serve with spoons for each guest to serve themselves.
