I was given this recipe from the ex-Mayor of Banyalbufar whose family also owns the delightful @sonborguny_restaurante and hotel.   After retiring,  Mateo discovered a talent for baking and now makes the cakes consumed at breakfast.

I loved how moist the cake was and asked for the recipe.  It transpired that so do most of the guests who stay at the hotel too!

Anyway,  as a thank you,  I promised I would be making the cake and posting the recipe.  I like this cake served with macerated strawberries but it is delicious eaten on its own too!

Ingredients (serves 16-20)

  • 1kg light cream cheese
  • 8 medium eggs
  • 280g caster sugar
  • 25g rice flour
  • 500g single cream

Method

In a bowl whisk all the ingredients to blend, pour into a greased cake tin measuring 20cm in diameter and bake in a preheated oven at 210 C  conventional for 35 minutes uncovered.  Cover with foil and continue cooking for 15 more minutes.  Take out of the oven, leave to cool and chill in the fridge.

I like it soft, creamy and gooey so take out of the fridge 30 minutes before serving.
