This recipe is from my Uni.Yum programme with recipes aimed at universtiy students.
The recipe is enough for two persons, even with reserving 1/3 of the broccoli florets for an omelette on the following page. As with many recipes, this being a salad, you can use up other fresh ingredients you may have in the fridge or substitute ones in the recipe with ones you actually have got. Spinach, French beans, kale or other greens would do instead of the broccoli although it is one of the best vegetables you can be eating.
Ingredients (serves 2)
- 1 small broccoli head
- 1 can of black eyed beans, drained
- 2 spring onions finely chopped
- 1 celery stick, finely sliced
- ½ a red and ½ yellow flame roasted peppers, finely chopped
- 3 tbsp extra virgin olive oil
- 3 tbsp Greek yogurt
- A piece of cucumber, approx. 3 cm long
- 3 tbsp wine vinegar
- 1 clove of garlic, finely chopped or ½ tsp garlic granules
Method
Grate the cucumber on the thick side of your boxed grater and put in a bowl. Sprinkle with a little salt and leave for 10 minutes.
Drain the black eyed beans and rinse under the cold tap. Leave for a few minutes to drain.
Cut the broccoli head into individual florets and again slice those in smaller pieces. Steam for a few minutes or cook in boiling water for 3-4 minutes till soft but not overcooked and limp. Remove from the heat and drop them in some cold water to stop them from cooking any further. Drain and transfer 1/3 of it in an airtight container to keep in the fridge if you are making the omelette of the next page.
While the broccoli is cooking, squeeze the cucumber to drain all its liquid. Put it in a bowl together with the yogurt, oil, vinegar, garlic and season with a little black pepper. Stir to mix it well and keep to one side.
In a large bowl, mix the black eyed beans, chopped spring onions, the broccoli, chopped celery and peppers and season with salt, pepper, some dried oregano and the vinaigrette or oil and vinegar. Taste and adjust taste.
Transfer onto a plate, and top with a generous spoonful of tzatziki.
