This recipe was something I cooked on a video for Kids On The Green,  a charity associated with young people affected by the Grenfell Tower.

Serves 2

For the Cod

  • 2 fillets of cod, approx. 250g
  • 2 bay leaves
  • ½ small onion, peeled and cut into 2 again
  • 5 pepper corns
  • 50g of fresh breadcrumbs
  • 2 spring onions finely chopped
  • ½ red pepper finely chopped2 tbsp mixed herbs, finely chopped
  • ½ tsp sumac, or sweet paprika or another spice you like
  • ½ tsp ground coriander or cumin or another spice you like
  • A pinch of salt
  • A pinch of pepper
  • 1 tsp mustard
  • 50ml extra virgin olive oil
  • 1 egg

For the sweet potato fries

  • 2 sweet potatoes, peeled and chopped in small long pieces, like large match sticks
  • 1 tbsp corn flour
  • 2 tbsp olive oil
  • A pinch of dried oregano
  • 1 tbsp of mixed spices (paprika, coriander, paprika, or any spices you like)

For the tartare sauce

  • 4 tbsp mayonnaise
  • 1 tbsp chopped gherkins
  • 1 tsp capers
  • 1 tbsp white wine vinegar
  • ½ tsp mustard
  • 1 tbsp finely chopped herbs
  • Salt and pepper

To serve:

  • 2 buns
  • 1 gem lettuce, finely shredded

Method

Preheat the oven to 200 0C.  Put the potatoes in a bowl, sprinkle them with the olive oil and the corn flour.

Spread on an oven sheet lined with baking paper, spaced apart and bake for  15 minutes. Turn over and continue cooking for another 10 -15 minutes till golden.

To make the tartar sauce,  mix all the ingredients in a bowl and keep in the fridge until needed.

For the fish burgers, put the cod in a frying pan. Cover with cold water and add the bay leaves, onion and pepper corns.   Poach on gentle heat for 3-4 minutes.  Take the fish out of the water with a spatula and leave to cool. Shred the fish into chunks and put in a bowl.   To that,  add everything else but half the oil and mix well with our hands.  Take handfuls of the mix and make four patties.

Place the patties on a baking sheet lined with baking paper and drizzle  with half of the remaining oil.

Bake in the oven for 12 minutes.  Turn over, sprinkle with the remaining oil and bake again for a further 15 minutes till golden.

To serve

Put a couple of fish burgers in a bun,  top with some shredded lettuce and a good dollop of the tartar sauce and serve the sweet potato fries on the side.
