A great snack and perfect for parties, family gatherings and picnics!
I love using Dodoni feta in this and all my feta recipes and am thrilled to be able to buy in the UK.
Ingredients (makes 10 pies)
For the pastry
- 120g Greek yogurt
- 350g plain flour
- 50ml sunflower oil
- 1 egg white
- 1 tbsp lemon juice
- 1 tsp salt
- 1 tsp sugar
- 1 tsp baking powder
- 25g butter, soft
- 1 egg yolk
For the leek and potato filling
- 3 small leeks (approx. 125g), white part only, thinly sliced
- 1 medium size potato, approx. 150g, cut in very small dice
- ½ onion, finely chopped
- 2 cloves of garlic, finely chopped
- 2 tbsp extra virgin olive oil
- 1/3 tsp mustard seeds
- 1/3 tsp cumin seeds
- A few strands of saffron
- 150ml vegetable stock
To assemble
- 100g feta
- 1 egg yolk
- 2 tbsp sesame seeds
Method
To make the pastry, put the yogurt, sunflower oil, egg white, salt and sugar in a bowl and add the flour with the baking powder slowly stirring until you have a rough dough. Add the soft butter and continue mixing with your hands. Knead for about 10 minutes until you have a soft, smooth dough.
Leave for 10 minutes to rest. Roll the pastry out into a long sausage and cut into 10 pieces.
To make the filling, bring a sauteing pan to a medium heat and add the olive oil and chopped onion. Sweat the onions for 3-4 minutes and add the garlic, mustard and cumin seeds and chopped leeks. Continue cooking stirring continuously for 3-4 minutes and add the chopped potatoes, Stir and cook for 2-3 more minutes and add the saffron strands and vegetable stock. Bring to a soft boil, then lower the heat, cover the pan and cook the vegetables slowly until all the liquid has been absorbed and the vegetables are soft. Leave the mix to cool. Crumble the feta into the potato and leek mix.
Preheat the oven to 180 0 C.
When the pastry has rested, roll out into a sausage and cut into equal size pieces.
Roll each one to a round shape of approx. 10cm diameter. Spoon some filling onto the one half and turn over the pastry to cover into a half moon shape. Whisk the egg yolk with a tablespoon of cold water and use to brush the pies. Sprinkle with the sesame seeds, place on a lined baking tray and bake for 25-30 minutes or until golden brown.
