There’s something special about cooking with ingredients grown by the hands of people who care. Vegetables lifted fresh from a friend’s garden or a local allotment seem to hold more flavour, more colour — and more heart — than anything you can buy.
When I was invited to help the Grange Fell Allotments celebrate their 10th anniversary — a wonderful event raising funds for two local charities — I came home with the most glorious cabbage as a thank-you gift. Its sweetness, its sheer size, its beautiful leaves… I knew immediately it deserved a recipe that would let it shine.
These grain, feta and spiced tomato cabbage rolls are one of the dishes it inspired. Soft leaves wrapped around a smoky, gently spiced filling; grains that stay pleasantly firm; creamy feta for richness; and just enough heat to make everything come alive. They’re deeply satisfying, naturally nourishing, and one of those rare dishes that feel both wholesome and indulgent.
Ingredients (serves 4, approx.12 rolls)
- 1 onion, finely chopped
- 1 small red chilli, chopped (optional)
- 4 tbsp olive oil
- 250g cooked grains
- 2–3 tbsp tomato purée
- ½ tsp smoked paprika
- 2 tbsp fresh coriander, finely chopped
- 200g feta, crumbled
- 200ml vegetable stock
- Salt and pepper
Method
Remove any tough outer leaves from a large white cabbage. Bring a large pot of salted water to the boil. Carefully lower in the whole cabbage and blanch for 3–5 minutes.
Remove from the heat and let the cabbage sit in the hot water for 15–30 minutes, until the leaves are pliable and easy to separate.
Once cool enough to handle, gently peel off the largest leaves and pat dry. Trim the thick stem at the base of each leaf if needed to make rolling easier.
To make the filling, in a wide pan, heat the olive oil over medium heat. Add the chopped onion and chilli (if you are using) and sauté for 4–5 minutes until softened and fragrant. Stir in the cooked grains (you may use just bulgur if you wish) and cook for 1–2 minutes to toast slightly. Add the tomato purée, smoked paprika, and 100ml hot water. Stir well and simmer gently for about 5–6 minutes, just until the grains absorb most of the liquid but are still slightly firm. Remove from heat. Stir in the crumbled feta, chopped coriander, and season with salt and pepper to taste.
Let the mixture cool slightly while you prepare to fill the cabbage leaves.
To assemble, lay a cabbage leaf flat on a board. Place about 1 heaped tablespoon of filling in the centre near the base. Fold in the sides and roll up tightly like a parcel.
Line the base of a wide pot with any torn or leftover cabbage leaves. Arrange the stuffed rolls seam-side down in a single layer. Pour over the stock and drizzle with a little olive oil. Place a heatproof plate on top of the rolls to hold them in place. Cover with a lid and simmer gently for 25–30 minutes, or until the cabbage is tender.
Let the rolls rest for a few minutes, then serve warm or at room temperature. A spoonful of Greek yogurt or labneh with lemon zest makes a perfect accompaniment.
