These brownies are everything a festive treat should be—rich, decadent and just a little bit magical. The combination of white chocolate and finely ground pistachios gives them a buttery sweetness and a subtle nuttiness that feels wonderfully luxurious. Cut into little triangles and decorated like Christmas trees, they make beautiful edible gifts, the kind that disappear quickly and are remembered fondly.
Packaged in cellophane bags or a pretty tin, they keep well for several days in an airtight container, making them perfect for gifting or for having on hand when friends drop by over the holidays. Simple to bake and delightful to decorate, they’re a charming addition to any Christmas baking list.
Ingredients (makes 20 brownies)
- 225g unsalted butter
- 225g white chocolate, finely chopped
- 250g caster sugar
- 1 tbsp vanilla extract
- 2 large eggs
- 150g plain flour
- 75g pistachios, finely ground
- A pinch of salt

- 100g white chocolate
- Edible decorations
Method
Preheat the oven to 175C. Line a small tray bake tin 25 x 20cm or similar with baking paper.
In a heatproof bowl over a pan of simmering water melt the white chocolate and butter together. Alternatively, you can do this in the microwave in 30 second stages so as not to burn the chocolate. Add the sugar, salt and vanilla to the chocolate and butter mix to combine. Next add the eggs, one at a time, whisking continuously.
Gradually add the flour and ground pistachios stirring until completely combined. Transfer the batter to the baking tray and bake for 40-45 minutes until a wooden skewer inserted in the centre comes out clean.
When the brownie cools, turn over onto a wooden board, remove the paper and cut in half and half again. Cut each quarter into triangles.
To decorate the brownies, melt the chocolate in a bowl over simmering water and transfer to a piping bag. Use it to decorate the triangles to resemble Christmas trees. Leave to set overnight before wrapping.
