It look months and months to carefully consider and select the kind of dishes that I thought would be appreciated by seasoned foodies, Grecophiles and those who cook from recipe boxes because it is now a lifestyle choice. I love to cook dishes from the company too as where I live it is not so easy to have access to some good ethnic cuisines.
It was important to me to include classics although some are better known than others but it is those hidden gems, the dishes that are not widely available in the tourist tavernas that excite me the most because whilst they are much loved by Greek families around the world, people spending a week or two in the country don’t normally have the chance to experience.
